Recipe: Chicken Parmesan Burgs

Aside from the "grow your own blueberries" and "enlarge your penis" junk emails I get at work, I finally got something that looked interesting from MyRecipes.com; Chicken Parmesan Burgers. Of course, after reading all the steps, I ended up doing my own thing but it came out really good according to hubby:

Grab the stuff: 8oz mozzarella cheese, 1lb ground chicken, ciabatta rolls, spaghetti sauce, rosemary, bread crumbs, red pepper, thyme and salt.

Mix together the chicken, 2/3 cup spaghetti sauce, 4 ounces of mozzerella cheese, dash of red pepper, sprigs of rosemary, pinch of thyme, splash of salt and a ton of breadcrumbs. I did not measure the spices or the crumbs; I eyeballed the mixture until I got a thick consistency. It is up to you!

Form mixture into patties, coat the pan with cooking spray and start cookin'.

Slice the ciabatta rolls and prepare them for broiling.

Flip patties every 7-8 minutes or so...I cook mine on the medium setting (#6 for those oven knobs that are numbered.)

Dammit. No matter how much I try and watch the BROIL setting, I seem to overdo it...always. (I put them in for less than 5 minutes.) The rolls were still edible though...after I scraped off some of the burntness...:)

Top the burg with some mozzarella cheese and enjoy! I will say that using ground chicken might take some time getting used to since it is more on the softer side...it is not like ground beef at all. Nonetheless...still good.

Salt Water

I am in absolute LOVE with everything that jewelry designer Judy Klimek creates. This gorgeous necklace is called "Salt Water" and is made of blue-green jasper, hand hammered crystal quartz, German silver and sterling silver but has an unattainable cost (for me) of $2100:


I have been actively going through my bead stash over the past few weeks and knew I had similar beads to create my own version:


I had a feeling this piece was going to be heavy. Like cinder block heavy...

Recipe: Chicken, Broccoli and Rice Casserole

I was in the mood tonight to clean out the pantry and freezer. I have a bad habit of buying things and moving all of the older stuff to the back and forgetting it is there. For tonight's dinner, I tossed together some things I had on hand and prayed:

1. Defrost some chicken
2. Grab the broccoli that has been in the back of the freezer for 6 months
3. Grab the rice that was jammed behind the 7 cans of pumpkin (yep, 7 freakin' cans) 
4. Cut up the chicken and cook in a little butter
5. I ran some hot water over the broccoli to speed up the thawing process
6. Boil 2 bags of rice for 10 minutes
7. Find the Cream of Anything cans in the pantry (mine just happen to be chicken)
8. Any shredded cheese will do...hubby is a fan of the mexican blend.
9. Stir together the rice, cans of soup, chicken and broccoli.
10. Dump into a baking dish and top with cheese. Cook for 30-45 minutes
DONE!

Dressing Room Disaster: Secretly Slender...ARGH!!!

Time to shop for some shorts...yipee.

Seems promising so far...
My rear is shaping up nicely...no pun intended.
Here is where things take a turn for the worse...what the F is going on in my middle??
Ok, come on.

I soon found out that "secretly slender", "tummy shaping panel" or anything relating to the sucking in one's excess inches really means "this garment can and will suck you in; but it will also push all of your fat upwards." Oh, that's a good look.

Local Eats: White Wolf Cafe

Over the weekend, Mom and I stopped into the White Wolf Cafe for a bite to eat:
Mom's Lunch
Chicken Miso soup 
Chicken Salad sandwich on rye
My Lunch 
Turkey Club sandwich
(The turkey was a little on the dry side but I think that was because it was actual slices of turkey...not cold cuts you get at the deli counter. I added a little mayo and all was fine!)
Pasta Salad
(I was surprised that it was actual spaghetti and not rotini style noodles...yum.)
The after effects...DELISH. Mom managed to wipe her plate clean but I was stuffed!

Seeing Stripes

I remember a time when you were told NOT to wear stripes because they make you look WIDER if you were a curvier girl with boobs, hips and an ass. I called bullish*t on that and found some stripes that work for me. The key, I found, is to rock a slimmer stripe and not the ones that look like they go on the top of a circus tent:
