Aside from the "grow your own blueberries" and "enlarge your penis" junk emails I get at work, I finally got something that looked interesting from MyRecipes.com; Chicken Parmesan Burgers. Of course, after reading all the steps, I ended up doing my own thing but it came out really good according to hubby:
Grab the stuff: 8oz mozzarella cheese, 1lb ground chicken, ciabatta rolls, spaghetti sauce, rosemary, bread crumbs, red pepper, thyme and salt.
Mix together the chicken, 2/3 cup spaghetti sauce, 4 ounces of mozzerella cheese, dash of red pepper, sprigs of rosemary, pinch of thyme, splash of salt and a ton of breadcrumbs. I did not measure the spices or the crumbs; I eyeballed the mixture until I got a thick consistency. It is up to you!
Form mixture into patties, coat the pan with cooking spray and start cookin'.
Slice the ciabatta rolls and prepare them for broiling.
Flip patties every 7-8 minutes or so...I cook mine on the medium setting (#6 for those oven knobs that are numbered.)
Dammit. No matter how much I try and watch the BROIL setting, I seem to overdo it...always. (I put them in for less than 5 minutes.) The rolls were still edible though...after I scraped off some of the burntness...:)
Top the burg with some mozzarella cheese and enjoy! I will say that using ground chicken might take some time getting used to since it is more on the softer side...it is not like ground beef at all. Nonetheless...still good.
